- Justin and I started out towards the bus stop to pick up Daniel this afternoon. It's a four-minute walk. When we left, it was raining, and we walked under a large umbrella but still got little drops here and there. When we rounded the corner, the wind and rain picked up, our umbrella was flipped over, I had to grab Justin to prevent him from literally being blown out into the street, we were drenched within 10 seconds, and ended up taking shelter in the apartment building in front of the stop after a woman screamed at us to get in out of the rain for the Love of God. Said she'd been on her exercycle looking out the window when the wind hit us, and seriously thought we were both going to be knocked out by the storm. Nice lady. Gave Justin a towel and hugs, as he was crying from the cold and the nasty surprise. And this is a kid who regularly goes out to play in the rain when it's really impressive.
- Took Justin to the eye doctor, who is just about the sweetest, gentlest guy ever. Incredibly patient with kids, and seems to actually enjoy them. And, he's capable of making a small boy enjoy a forty-five minute eye exam. My hero.
Baked Apple Streusel
Ingredients
4 medium apples, peeled, cored and thinly sliced (use firm apples)
1/2 cup unpacked brown sugar
1/2 tsp ground cinnamon
2 Tbsp fresh lemon juice
1/4 cup all-purpose flour
1/4 cup uncooked old fashioned oats
3 Tbsp reduced-calorie margarine
Instructions- Preheat oven to 350°F.
- Stir together apples, 1/4 cup of brown sugar, cinnamon and lemon juice; pour into a 1 1/2 quart baking dish.
- Cut flour, oatmeal, remaining brown sugar and margarine together with a pastry blender or fork in a
medium bowl; sprinkle over apple mixture. - Bake until apples are tender and top is browned, about 45 minutes.
- Preheat oven to 350°F.
- Guy & Guylaine came over for dinner. He's looking very good :)
