Ingredients
1/2 cup shortening
1/2 cup brown sugar
1/2 white sugar
1 egg, beaten
1/2 tsp. vanilla
2 cups flour
2 tsps. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 cup crushed pineapple
2/3 cup chopped walnuts (optional)
Instructions
1. Cream shortening and sugars.
2. Add beaten egg and vanilla.
3. Add dry ingredients.
4. Drain pineapple and add to mixture, then nuts and flavouring.
5. Drop from teaspoon onto a greased baking sheet.
6. Bake at 350 degrees for 15-20 minutes,
Makes approximately 4 dozen
Boys didn't like it much; not enough sugar or oomph, probably. I found it delicate-tasting and very yummy.
